Quick, fresh and ever-so tasty! This couscous is levelled up by smoky and moreish organic chicken and sharp bursts of lime.
Ingredients

2 chicken breast

200ml chicken bone broth

150g couscous
-
1 tsp fresh coriander, chopped

1 tbsp tomato puree
-
2 tsp paprika
-
2 tsp olive oil

150g asparagus
-
1 red pepper, chopped
-
1 yellow pepper, chopped
-
100g cherry tomatoes
-
½ lime, zest and juice
Directions
Mix together the coriander, paprika, tomato puree and pepper in a bowl, add your chicken breasts and coat fully
Bring a frying pan to high heat, add oil and fry for 3 minutes each side or until cooked through. Remove the chicken breasts and set aside
In a separate pan, simmer the chicken bone broth over medium/high heat for 5-6 minutes. Use the broth to cook your asparagus until tender. When steaming, remove the asparagus and add the couscous, lime zest and a sprinkle of salt and pepper. Cover with a lid/plate and leave for 5 minutes
Meanwhile, heat the remaining olive oil in and fry off your veggies until they begin to soften. Return the chicken to the same pan, reduce the heat and warm through.
Fluff the couscous with a fork and add fresh lime juice. Serve immediately as a bed for the chicken and top with asparagus and fresh garnish
