Blueberry Gin Fizz Recipe

Ingredients

  • 300-400ml organic gin

  • 1.5 litres soda water

  • 300g fresh blueberries

  • 150g cane sugar

  • 5 fresh basil leaves

  • 4 ice cubes

Directions

  1. Place the sugar and 150ml of water into a saucepan and simmer over a low heat until all the sugar has dissolved. Turn up the heat to medium-low and add the blueberries. Cook, stirring occasionally for 15 mins or until the blueberries have started to soften and break down. Leave to cool, then create a smooth purée with the help of a hand blender (you can also leave it as is). 

  2. To serve, spoon 1 tbsp of the blueberry purée into each glass, stir in a single or (preferably) double measure of the gin and top up with soda water. Garnish each glass with a leaf or two of basil and add a few ice cubes. If you want to make it even easier, mix everything together in a big jug and let your guests help themselves.
