Cranberry, Bacon and Brie Parcels Recipe

These pastry parcels are a Christmas gift! Filled with creamy melted brie, smoky bacon and sweet cranberry they are utterly delicious...
Ingredients

1 pack of pre-made puff pastry (around 320g if you’re making your own)

100g of brie (cut into 8 pieces)

3tbsp of cranberry sauce

8 rashers of streaky bacon

1 egg (beaten)
Directions
Start by cooking the bacon to your preferred crispiness and put to the side.
Roll out your pastry and cut into 16 evenly sized rectangles.
Place 8 of your pastry rectangles onto a baking tray lined with baking paper, leaving space between them.
Spread 1 tsp of cranberry sauce onto each of the rectangles, leaving a gap so it doesn’t reach the edges
On top of the cranberry layer a rasher of bacon and a slice of brie then cover with one of the remaining pastry rectangles.
Seal the pastry parcel by pressing down along the edges with a fork and make a small slit in the top of each parcel to allow for steam.
Place your parcels in the fridge for 10-15 minutes and preheat the oven to 180°C/355°F fan.
Remove your parcels from the fridge and brush with a bit of egg wash and a sprinkle of sea salt.
Bake your parcels in the oven for around 20-25 minutes until they are golden brown and nicely puffed up.
Leave to cool slightly before serving and enjoying!
