Braised Red Cabbage with Apples
A warming and festive addition to your Christmas dinner – especially delicious on Boxing Day with your Christmas ham and mustard. Add Roam & Relish Smoked Streaky Bacon at the very beginning for a delicious twist. Not traditional, but certainly worth breaking the habit for!
1 red cabbage, roughly sliced
2 onions, peeled and sliced
2 cooking apples, peeled, cored and chopped into chunks
100ml red wine
100ml balsamic vinegar
1 knob of butter
sea salt & black pepper
¼ teaspoon freshly grated nutmeg
¼ teaspoon mixed spice
¼ teaspoon ground cinnamon
3 tablespoons dark brown soft sugar
50g sultanas (optional)
Heat the butter in a large saucepan or casserole dish.
Add the onion and cook until softened, then add the cabbage and cook for a few minutes.
Add the wine, stir and continue to cook for a minute before adding in the apples, vinegar, seasoning, sugar and sultanas, if using.
