This velvety smooth dip is more than just a dip. That’s why we’re sure you’ll want to dunk your croudites, grissini sticks and pitta breads and not just have a little dip. With the sweetness from the broad beans, punchy fresh mint and a salted creaminess from the feta, you’ll look forward to broad bean season each year when you can dig into this dunk once again.

Broad Bean, Mint & Feta Dunk

Ingredients

  • 500g Broad Beans (peeled)

  • 100g Medita or Feta

  • 10g Fresh Mint Leaves (chopped)

  • 1 Garlic Clove (chopped)

  • Olive Oil

  • Lime Juice

  • Salt

Directions

  1. Cook the broad beans in a saucepan of boiling salted water for 2-3 minutes or until just tender. Refresh under cold running water then drain.

  2. In a food blender, add the beans, feta, mint, garlic and a pinch of salt and blend until almost smooth. With the blades running, add the olive oil in a thin steady stream until silky smooth!

  3. Scoop into a bowl and drizzle a little olive oil and a squeeze of lime over, then dunk away!
