Our Farms & Suppliers
We source our organic beef from our exclusive network of local Devon organic farms. The cows spend their days grazing freely on a wide variety of native grasses, wildflowers and herbs, roaming the fields and resting under the trees. In the winter, they are given homegrown, organic silage and hay to munch throughout the day. We support traditional British cattle breeds that benefit from natural, slow-growing lives and produce beautifully marbled beef. Our beef is then hung for at least 21 days to mature the flavour for tender, flavourful meat. This creates an exceptional flavour and soft texture that is second to none. From our own cured pastrami to slow-roasting joints, we are immensely proud of our organic, pasture-fed beef.
How To Cook
We recommend the following for the beef Wellington:

Preheat the Oven: Preheat your oven to 200°C (400°F).

Prepare the Beef Wellington:
- Remove the Beef Wellington from any packaging.
- Place it on a baking tray lined with parchment paper or a silicone baking mat.

Bake the Beef Wellington:
- For a 500g Wellington, bake it in the preheated oven for 25-30 minutes.
- Check the internal temperature using a meat thermometer. For medium-rare, the internal temperature should be around 50-55°C (120-130°F). For medium, aim for 60°C (140°F).
- The puff pastry should be golden brown and crisp on the outside.

Rest the Wellington:
- Once it’s done, remove the Beef Wellington from the oven and let it rest for about 10 minutes. This allows the juices to redistribute and helps the Wellington keep its shape.

Serve:
- Slice carefully and serve immediately! Enjoy!
We recommend the following for the Luxury Mash:
- Empty the mashed potatoes into a saucepan: If they’re in a tub or plastic container, transfer them into a medium saucepan.
- Heat over medium heat: Stir occasionally to ensure they heat evenly and don’t stick to the bottom of the pan.
- Add butter or milk (optional): If you like creamier mashed potatoes, stir in a little butter or milk as they heat through. You can also add salt and pepper to taste.
- Cook until hot: After about 5-10 minutes, the mashed potatoes should be heated through. Stir to check the consistency and adjust with a little more butter or milk if needed.
We recommend the following for the Red Wine Sauce:
- Pour the sauce into a saucepan: Transfer the red wine sauce from the packaging into a small to medium saucepan.
- Heat over low to medium heat: Stir occasionally to prevent the sauce from sticking to the bottom or burning.
- Simmer gently: Let the sauce simmer for about 5-10 minutes, allowing it to heat through and thicken slightly.
- Serve hot: Once heated through, pour over your dish and enjoy!
