A little higher in fat because it's cut from the thigh rather than our organic turkey mince which is taken from the breast, it's a darker meat that's going to give you so much flavour.

Turkey Thigh Mince Recipe
Ingredients:
- 250g turkey thigh mince
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 small red chili, finely chopped (optional)
- 1 small bell pepper, diced
- 1 medium carrot, julienned or grated
- 2-3 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon honey or brown sugar
- 1 handful fresh spinach or bok choy
- 1 spring onion, finely sliced (for garnish)
- Sesame seeds (optional, for garnish)
- Cooked rice or noodles (to serve)
Instructions:

Prepare the ingredients: Chop all vegetables and have the sauces measured and ready.

Heat the pan: Heat 2 tablespoons of olive oil in a large frying pan or wok over medium heat.

Cook the mince: Add the turkey mince and break it up with a spoon. Cook for 5-7 minutes until browned. Remove the mince and set aside.

Sauté aromatics: In the same pan, add a bit more oil if needed. Sauté the chopped onion, garlic, chili, and ginger until fragrant (about 2 minutes).

Cook vegetables: Add the bell pepper and carrot. Stir-fry for 3-4 minutes until slightly softened.

Add the mince back: Return the cooked turkey mince to the pan. Mix well with the vegetables.

Season the stir-fry: Add soy sauce, oyster sauce, sesame oil, and honey. Stir to coat the ingredients evenly. Adjust seasoning to taste.

Add greens: Toss in the spinach or bok choy and cook for 1-2 minutes until wilted.

Serve and garnish: Serve the stir-fry over steamed rice or noodles. Garnish with spring onions and sesame seeds.
