We all crave a taste of nostalgia every now and then. A surefire way to satisfy those cravings is knocking up a couple of our delicious homemade fish finger sandwiches.

Complete with sharp, chunky tartare sauce!

Homemade Fish Finger Sandwich Recipe

Ingredients

  • 600g cod fillet, cut into finger shapes

  • 1 lettuce, roughly chopped

  • 125g hard cheese, grated

  • 85g breadcrumbs

  • 60g plain flour

  • 3 eggs, beaten

  • 1 sourdough bloomer loaf

  • 200ml mayonnaise

  • 1 tbsp dijon mustard

  • 3 tbsp capers, chopped

  • 3 tbsp gherkins, chopped

  • 3 tbsp fresh parsley, chopped

  • squeeze of lemon juice

  • salt and pepper to taste

Directions

  1. Mix the Parmesan and breadcrumbs and add to a shallow bowl. Place the flour in another bowl and the eggs in another. Sprinkle salt over the fish then dip in the flour, then the egg, then the breadcrumbs, shaking off the excess as you go until all the fish fingers are coated in the batter.

  2. Heat a frying pan with a generous amount of oil and shallow fry the fish fingers for 2 to 3 minutes or until crispy and golden brown.

  3. Assemble your tartare sauce by simply mixing all ingredients together.

  4. Slice your sourdough thickly and generously top with tartare sauce. Add fresh lettuce and fish fingers; serve with gherkins and lemon wedges.
