As we head into the golden days of late summer, the British countryside is bursting with vibrant fruit and vegetables ready for harvesting and it's the season of abundance for the meat from our network of organic farms. Despite a rainy start to the year, there is still a veritable feast to discover.
As we celebrate the Lammas harvest festival, let's discover what to look for in late summer.
Veg & Fruit
Tomatoes are at their ripest and juiciest during late summer with the warmth of the sun intensifying their sweet flavour. From sweet cherry tomatoes to meaty beefsteaks, the varieties are endless. Enjoy them fresh in salads, roasted with garlic and herbs, or as the star of a homemade salsa.
Courgettes are sometimes too abundant as any keen gardener can tell you. Luckily they are also incredibly versatile. Their mild flavour makes them perfect for grilling, adding to stir-fries, or even added to cakes. Try them sliced thinly and sautéed with a touch of olive oil and garlic for a simple, delicious side dish.
Radishes rarely enjoy the spotlight, which is a shame as their fresh peppery taste works well against the sweetness of tomatoes and crispness of cucumbers in summer salads. Radishes are delicious roasted or basted in butter. Try air frying slices of radish and sprinkling with sea salt for a healthy snack.
Late summer is the time to enjoy sweetcorn at its best. Whether grilled on the barbecue, or boiled and slathered with butter, sweetcorn is a great summer side dish. Add cooked kernels to chopped tomatoes and chilli for a salsa to accompany your barbecue.
Fennel is a bit of a love it or hate it vegetable. If you love its aniseed flavour, then add it raw to salads or serve alongside oily fish where its distinct taste won’t overpower the dish. For those who prefer a gentler flavour, then roasting or grilling fennel will mellow the aniseed notes. Try an onion and fennel tarte tatin for an impressive summer centrepiece.
Even with our sometimes lacklustre weather, Chilli Peppers can thrive in the UK, although they may need a polytunnel to keep them warm. Chilli works well with any roasting joint, just add to the roasting dish with chopped onions and herbs to impart a mild chilli heat to the meat juices.
Don’t forget our fabulous British summer fruits; plums, redcurrants, rhubarb, and cherries are all at their peak right now and work beautifully paired with meat or in a traditional dessert. Try rhubarb or plums with pork, redcurrants with duck, or cherries with beef.

Late summer shows the versatility of our organic meat. Summer cooking is all about slow cooking and fast grilling, low fuss food and easy dining.
Organic chicken is a summer staple, perfect for barbecues and family gatherings. It's the season when cuts like drumsticks and wings come into their own, especially with a homemade marinade.
Summer organic lamb is perfect for outdoor eating, lamb kebabs with peppers and onions, slow-cooked lamb shoulder with rosemary and garlic, or our butterflied lamb on the barbecue
Late summer barbecues wouldn’t be complete without some grass fed, organic beef. Whether it’s a juicy burger, a perfectly grilled steak, or our slow-cooked brisket, organic beef will always be popular.
