Chestnut and Bacon Stuffing Balls

This festive stuffing recipe includes seasonal chestnuts and bacon and works well with all roast meats.
Ingredients

1 organic onion, finely diced

6 rashers of organic streaky bacon, chopped

200g cooked chestnuts, chopped

450g organic pork sausage meat

1 organic egg, beaten

Handful fresh white breadcrumbs

Handful chopped winter herbs; sage, rosemary and thyme

Sea salt & cracked black pepper
Directions
Gently fry the chopped onions and bacon in a knob of butter until the onions are soft and translucent and the bacon is cooked. Set aside to cool.
Mix the remaining ingredients with the cooled onion and bacon in a bowl. Season and scrunch the mixture with your hands until well combined.
Using damp hands, roll the stuffing mixture into approximately 24 stuffing balls.
Cook at 180C / 160C fan in a roasting dish for 25 minutes

Suitable for home freezing. Freeze raw. Defrost overnight in the fridge and roast alongside your favourite meat centrepiece.
