A gammon joint roasted with a honey and mustard glaze for a celebratory feast.
Ingredients

2kg Unsmoked Cured Gammon Joint

2 tbsp organic honey
-
2 tbsp Dijon mustard

Handful whole cloves
Directions
Preheat the oven to 180c / 160c fan.
Lay two sheets of foil in a large roasting dish lengthwise and widthwise. Place the gammon joint in the roasting dish and seal the ends of the foil over the joint to create a parcel. Make sure there is a little space between the foil and the gammon joint to allow air to circulate within your foil parcel.
Roast in the oven for 30 minutes per 450g plus an additional 10 minutes
Remove the gammon joint from the oven and carefully open the foil parcel. Place the joint on a carving board saving the cooking juices.
With a sharp knife remove the top layer of skin, leaving a good layer of fat behind.
Score the remaining fat in a diamond pattern and push a whole clove into the centre of each diamond shape.
In a small bowl mix the honey and mustard with 1 tbsp of the cooking juices. Spread this glaze over your scored fat.
Return the gammon joint to the oven for a final 20 minutes of cooking.
