Thai Pork in Garlic Recipe

Ingredients

  • 200g Eversfield Organic pork diced, porkloin or pork belly

  • 3 cloves of garlic

  • 2 tsp sliced garlic

  • 1/2 tsp coriander root

  • 4 peppercorns

  • 2 tsp fish sauce

  • 8 tbsp cooking oil

Directions

  1. Slice the organic pork thinly.

  2. Pound the garlic, coriander root and peppercorn.

  3. Mix the paste with the pork and add the fish sauce.

  4. Marinade the organic pork for about 1 hour.

  5. Heat 2 tablespoons of the oil and brown the sliced garlic, taking care not to burn. Remove from the pan.

  6. Add the remaining oil on a medium heat.

  7. Fry the organic pork until it is almost crispy.

  8. Remove the pork from the pan and leave as much oil behind as possible.

  9. Serve with the fried sliced garlic and chilli sauce if required or on a bed of crisp green vegetables.
