Our Farms & Suppliers
From an organic parent flock of Peking ducks, our ducklings arrive with our lovely farmer, Ross for a first week on the farm cosying up under heat lamps. On the East Devon farm, they then spend another week pottering indoors before they are ready to go wild exploring further afield on the Devon hills. With a fresh pool to splash and bathe in, and straw-filled houses to recline when all the frolicking gets too much, these ducks are a chilled-out bunch. Open fields to roam allow for a totally organic and natural development. The riverbed of the Otter is the perfect backdrop for slow-growing growing plump, well-fed ducks
How To Cook
We recommend:
Ingredients:
- Duck stir-fry strips
- 1-2 tbsp of oil (vegetable, peanut, or sesame oil)
- Vegetables: (e.g., bell peppers, onions, carrots, broccoli, snow peas, mushrooms, etc.)
- Garlic (2-3 cloves, minced)
- Ginger (1-inch piece, grated or finely chopped)
- Soy sauce or stir-fry sauce of your choice
- Sesame oil (optional, for added flavour)
- Rice or noodles (optional)
Method:
-
Prepare your ingredients:
- Ensure all your vegetables are sliced into bite-sized pieces before starting. Stir-frying is a quick process, so having everything ready is key.
- Pat the duck strips dry with paper towels to ensure they sear properly.
-
Heat the oil:
- Heat a wok or large frying pan over high heat and add 1-2 tbsp of oil. Make sure the pan is hot before adding the duck.
-
Cook the duck strips:
- Add the duck strips to the hot pan in a single layer. Stir-fry for about 3-5 minutes, depending on the thickness of the strips. Stir frequently, until they are golden brown on the outside and cooked through (duck should be pink inside but not raw). Remove the duck strips from the pan and set them aside.
-
Cook the vegetables:
- In the same pan, add more oil if needed. Add your prepared vegetables and stir-fry for about 3-4 minutes until they start to soften but remain crisp.
- Add the minced garlic and ginger and stir for another 30 seconds until fragrant.
-
Add sauce and duck:
- Return the cooked duck strips to the pan and pour in soy sauce or your preferred stir-fry sauce.
- Stir everything together for 1-2 minutes until the duck is heated through and the sauce has coated the meat and vegetables.
-
Finish and serve:
- For extra flavour, drizzle a little sesame oil over the stir-fry before serving.
- Serve hot with rice or noodles.
