How to Store  

Our whole chicken is delivered fresh in an insulated box. They are butchered fresh to order and will arrive with an 8-day shelf life (including the day of delivery). We recommend for these to be stored below 4 degrees or alternatively, you can pop them in the freezer for up to 6 months.

Our super organic chicken farmer, Ross, is based in the hills of Honiton, Devon on a family-run farm supplying some of the finest organic poultry in the country. The chickens are reared in small flocks with open fields to roam and forage, where they can enjoy a peaceful and happy life, scratching and pecking for their own tasty treats. In addition, they are fed a 100% organic diet and kept cosy at night in warm shelters, free from the routine use of antibiotics. How To Cook  

We recommend:

Classic Spatchcock Chicken

Ingredients:

  • 1 whole chicken (about 1.5-2 kg)
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary or thyme (or 1 teaspoon dried)
  • Salt and freshly ground black pepper
  • 1 onion, quartered
  • 2 carrots, peeled and cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 cup chicken stock (or water)

Instructions:

  1. Prepare the Chicken:

    • Spatchcock the Chicken: Place the chicken breast-side down on a cutting board. Using sharp kitchen shears or a knife, cut along both sides of the backbone and remove it. Flip the chicken over and press down on the breastbone to flatten the bird.
    • Dry: Pat the chicken dry with paper towels.
  2. Season:

    • Rub: Rub the chicken all over with olive oil.
    • Season: Generously season the chicken inside and out with salt and pepper. Sprinkle minced garlic and fresh herbs over the chicken and squeeze the lemon halves over it. Place the lemon halves inside the cavity.
  3. Prepare the Roasting Pan:

    • Vegetables: Arrange the onion, carrots, and celery in the bottom of a roasting pan.
    • Add Liquid: Pour the chicken stock or water into the pan.
  4. Roast the Chicken:

    • Place in Pan: Place the spatchcocked chicken, skin-side up, on top of the vegetables in the roasting pan.
    • Roast: Roast in the preheated oven at 220°C (200°C fan)/425°F/Gas Mark 7 for about 45-55 minutes, or until the skin is crispy and golden brown, and the internal temperature reaches 75°C (165°F) when measured at the thickest part of the thigh.
  5. Rest and Serve:

    • Rest: Remove the chicken from the oven and let it rest for 10 minutes before carving.
    • Carve: Carve the chicken and serve with the roasted vegetables.

Variations and Flavour Ideas

1. Herb and Garlic Spatchcock Chicken:

  • Add: Mix 2 tablespoons of chopped fresh rosemary, thyme, and parsley with the olive oil before rubbing it on the chicken.
  • Coat: For extra flavour, rub some of the herb mixture under the skin.

2. Lemon and Herb Spatchcock Chicken:

  • Add: Add additional lemon zest and thinly sliced lemon under the skin for a more pronounced citrus flavour.
  • Marinate: Marinate the chicken in the refrigerator for a few hours with the lemon and herbs before roasting for deeper flavour.

3. Spiced Spatchcock Chicken:

  • Add: Mix 1 tablespoon paprika, 1 teaspoon ground cumin, 1 teaspoon garlic powder, and 1 teaspoon onion powder with the olive oil.
  • Rub: Rub the spice mixture all over the chicken for a robust flavour.
