Bring a pan to a medium heat and empty the contents of your chunky chilli con carne. Simmer the mixture for 6-8 minutes with a splash of water if required.
Preheat a grill to high. Tip the tortilla chips onto a baking tray.
Add the chilli mix on top of the tortilla chips. Now layer first with your grated cheddar. Next, add your freshly cut veggies and lashings of your sauces.
Place under the grill and cook for 5-6 minutes, or until the cheese melts and begins to bubble.
Garnish with fresh herbs, spring onion and a healthy squeeze of lime before digging in.
