Get ahead with this rich chicken gravy which can be made up to a month before needed and frozen.
Ingredients

2 organic onions, roughly chopped

2 organic carrots, roughly chopped

2 organic celery sticks, roughly chopped

4 organic garlic cloves, smashed

10 organic chicken wings

Organic chicken or turkey giblets, if available

1.5 litres homemade organic chicken stock or stock cubes

2 Bay leaves

Sprig of rosemary

1.5 tbsp plain flour

2 tbsp olive oil
Directions
Preheat the oven to 190C / 170C fan.
Peel the onions and carrots and roughly chop the onions, carrots and celery.
Put the chopped vegetables into a roasting tin with the chicken wings, giblets, garlic and herbs.
Mix with 2 tbsp olive oil and season generously.
Roast for an hour until the chicken and veg are cooked and starting to caramelise.
Put the roasting tin on the hob on a low heat, add the flour and mix with a wooden spoon.
Turn up the heat and slowly add the stock, mixing well and scraping the bottom of the roasting tin.
Simmer until the stock has reduced and you have your desired gravy thickness.
Strain the gravy into a freezable container and discard the veg and chicken bits.
Allow to cool before freezing.
To use, defrost overnight and heat gently until piping hot, allow to simmer for a few minutes then serve.
