This delicious recipe takes our organic chicken breast to the next level, stuffing it with a rich and creamy mixture of ricotta, spinach and mushroom to make for a mouthwatering dish.
Ingredients

2 organic chicken breasts (skin on)

1 onion (diced)

2 cloves of garlic (minced)

50g of chestnut mushrooms

1 handful of spinach (chopped finely)

1tbsp olive oil

2 sprigs of fresh thyme

2 knobs of butter
Directions
Preheat oven to 180°C and warm the oil in a frying pan. Then add your onions and garlic and sauté for around 2 minutes, until the onions have begun to soften.
Add the mushrooms and continue to sauté for a further 2 minutes before stirring in the spinach and seasoning with salt and pepper.
Remove from the heat and allow to cool in a bowl. Once the mixture has cooled add the ricotta and stir until everything is nicely combined, the set aside.
Prepare your chicken breasts by slicing them through the middle under the skin to create a ‘pocket’ with one side left intact.
Take your ricotta mixture and evenly split it between the two breasts, stuffing it into the pocket of each.
Place your stuffed chicken breasts on a parchment lined baking tray, seasoning with salt and pepper and topping each with a knob of butter, then transfer to the oven and bake for 30 minutes on the top shelf.
Serve with your favourite seasonal veggies and potatoes and enjoy!
