Place the lamb rack in a dish and sprinkle the
chopped garlic and rosemary around the rack. Drizzle with olive oil and leave
to marinate for a few hours or preferably overnight.
When ready to cook, preheat the oven to 200C.
Season the rack of lamb with a generous helping of salt and pepper.
Heat a frying pan on a moderate temperature and
place the rack fat side down for 2-3 minutes to brown slightly. Then, quickly
brown the ends of the rack too, ensuring all the meat is seared.
Place the rack of lamb in a roasting tin and cook
for around 10 minutes for rare, 17-20 minutes for medium and 25 minutes for
well-done.
When cooked for the desired time, remove from the
oven and transfer the lamb rack to a plate and rest for 5 minutes before
serving and slicing.
