Ingredients

3cm chunk of ginger (peeled and chopped)

2 cloves of garlic (chopped finely)

2 onions (chopped)

2 chillies (deseeded and chopped finely)

1 tsp turmeric

1 tsp cumin
-
1 tsp ground coriander

1 tsp chilli powder

600g of lamb neck fillet

4 tomatoes (chopped)

1 tbsp tomato puree

100g spinach (chopped)
Directions
In a food processor place the ginger, garlic and onions and whizz them to form a paste.
In a large saucepan, heat 1 tbsp of oil and add to it the paste, chillies and ½ a tsp of salt and cook until fragrant.
Add all the spices to the pan and cook for a couple of minutes.
Add the lamb and cook and stir it in amongst the paste and spices until it has browned.
Stir in the tomatoes, tomato puree and some water and bring to a simmer.
Cover the pan and cook for an hour, then add the spinach and cook for a further 15 minutes.
Serve with basmati rice or naan and enjoy!
