A Natural Process: Oxidation
Organic meat, like ours, is free from artificial preservatives and colour enhancers. That means it behaves like real food should. After meat is cut, the surface reacts with oxygen in the air – a process called oxidation. Initially, the meat turns a rich red colour, known as "blooming." Over time, especially if it's been exposed to air in the fridge or during delivery, some areas can turn brown or grey. This is completely normal, especially in vacuum-packed or tightly wrapped cuts.
It’s important to know that oxidation is not a sign of spoilage, but a natural chemical change. The best indicators of freshness are smell and texture. If your meat smells clean and fresh, and feels firm to the touch, then it’s perfectly safe to cook and enjoy.
No Preservatives. No Gases. No Illusions.
In contrast, many supermarkets use modified atmosphere packaging (MAP) to make their meat appear fresher for longer. These packs often contain gases like carbon monoxide to keep the meat looking red and uniform – even when it’s past its best. It may look appealing, but it’s a visual illusion.
