Herby Yorkshire Puddings Recipe

Add a flavoursome touch to your roast dinner with these Yorkshire puddings which combine the best of both worlds with crunchy and doughy textures.
The perfect accompaniment to a grass-fed organic beef joint.

Ingredients

75g beef fat or dripping

200g plain white flour

3 eggs

300ml whole milk

15g fresh rosemary
-
15 fresh thyme
-
pinch of salt
Directions
Pre-heat the oven to 220°C, Fan 200°C, 425°F, Gas 7.
Brush each section of your muffin tray with the beef fat.
Place the flour and salt into a large mixing bowl or jug and stir them together. Now break the eggs into the bowl, add the milk and beat until you achieve a smooth batter. Pick your herbs and mix into the batter. You can now refrigerate the batter for around 12 hours if you wish.
Grab your baking tray and place into the oven until the fat is hot and beginning to bubble. Carefully remove the tray from the oven and pour in your batter, giving it a stir before it enters the baking tray.
Return the baking tray to the oven and bake the puddings for 25-30 minutes, keeping a close eye depending on your preference for softness or crispness of the pudding.
Serve up and enjoy.
