This simple veggie curry is a great way to get 3 of your 5 a day, delicious and full of plant protein!

Ingredients

1 onion (diced)

2 cloves of garlic (crushed)

3cm piece of ginger (peeled)

1 green chilli (deseeded and sliced)

2 tbsp garam masala

1 tsp turmeric

400g tomatoes (fresh and chopped)

400g chickpeas (drained and rinsed)

120 ml water
-
½ lemon (juiced)
-
10g coriander (chopped)
Directions
Heat 1 tbsp of oil in a large pan over a medium-high heat and add the onion, cooking until it begins to brown.
Add the garlic, ginger and chilli and cook for a further 3 - 4 minutes.
Add the garam masala, turmeric and salt and pepper and let them infuse for 2 minutes, then add in the tomatoes, chickpeas and water, stirring to incorporate everything together.
The tomatoes should begin breaking down to form a thicker stew. When this happens bring everything to a simmer and cover the pan with a lid.
Cook for 15 minutes, stirring occasionally.
Remove the lid and reduce the heat, the add the lemon juice and coriander and cook for 2 minutes to combine.
Serve with basmati rice or naan and enjoy!
