Sauté the onions, carrots and celery on medium heat in butter and add all your seasonings bar honey, stirring frequently to avoid burning.
Add your mince and brown. Remove from the pan and deglaze with your red wine. Now add the beef bone broth and simmer for 10-15 minutes on a low heat until the liquid has halved. Stir in the tomatoes and heat for 2 minutes.
Add your honey and stir. Season to taste with salt and pepper and simmer on low for another 30 minutes. Meanwhile cook your choice of carb according to packet instructions.
Serve hot straight from the pot with shavings of your favourite cheese and a glug of olive oil.
