Transform your roast potatoes with the rich, savoury flavors of rosemary and garlic infused meat or duck fat. This simple yet indulgent recipe creates the crispiest, tastiest potatoes - perfect for any feast, Sunday roast or Christmas spread.
Ingredients

200g beef tallow, goose fat or duck fat

Handful fresh rosemary leaves

4 garlice cloves, peeled
Directions
Roughly chop the rosemary and garlic by hand or in a food processor
Heat a small saucepan then briefly toast the garlic and rosemary mix to release the fragrant oils and flavours but be careful not to colour or burn the garlic
Add the tallow into the hot pan, letting it melt slowly and gently infuse with the garlic and rosemary
Carefully pour in the liquid fat into a sterilized Kilner jar, seal and leave to set. It’ll keep in the fridge for at least a month
Use a tablespoon of your flavoured fat to roast potatoes or other veg for a delicious side
