Organic Thyme

Organic Bay Leaves

Chicken Stock Cubes

Directions
Place the organic chicken thighs and drumsticks in a medium to large saucepan and add the water, completely covering the chicken.
Add the bay leaves to the pan and season with salt and pepper. Bring to the boil on a high heat, then cover and simmer for around an hour or until chicken is cooked through.
Remove the chicken from the saucepan and check it's cooked by ensuring the juices run clear. If the juices aren't clear or there's any pink meat, cook for another 10-15 minutes at a time.
Add the leeks, carrots and prunes to the cooking liquid, adding chicken stock cubes.
Bring the organic vegetables to the boil then cover and cook for around 20 minutes or until the veggies are tender.
Pull the organic chicken away from the bone and chop into bite-sized chunks. Remove the bay leaves from the saucepan and add any additional seasoning if needed.
Add the organic chicken back into the pan with the organic veg and stir well. Heat through until piping hot, then serve.
