The Next Instalment in Our ‘How to Cook’ Series

 

The first part of our new ‘How to Cook’ series saw us explain our favourite steak recipe as we learnt how to cook steak with our Taste of the West Gold awarded organic beef Rib Eye. From one award-winning cut to another, our next instalment explores the best beef burger recipe using our Beef Steak Burger – deemed “Britain’s Best Burger” by Good Housekeeping Magazine. So, let’s find out how to cook burgers the Eversfield Organic way… just in time for National Burger Day.

The celebration of one of the most popular meat dishes runs on Thursday 26th August 2021 across the UK. Britain’s Best Burger

You’ve already heard us say (just a few times) that our organic, 100% grass fed and finished Beef Steak Burgers are “Britain’s Best Burger” according to Good Housekeeping magazine. But what makes our organic burgers a cut above the rest? Just like all of our organic meat, the Beef Steak Burgers are hand prepared by our team of expert butchers right here on our organic farm. Our grass fed beef is dry aged for a minimum of 28 days for a flavour that is second-to-none. With this, our butchers need only add a pinch of salt and pepper, plus organic onions, as the seasoning to our Steak Burgers.

 

Our burgers are made from organic, grass fed prime steak cuts from native cattle breeds, including our lovely herd of Aberdeen Angus Heritage cattle. This only adds to the intense meaty flavour. On top of this, we’re proud to be one of only a handful of organic meat producers that hold both Soil Association organic and PFLA (Pasture for Life Association), meaning our cattle see the highest standard of animal welfare. Fed only on pasture, never grain, the natural feed and healthy lives of the animals ensures the finest cuts of organic beef, reflected in the taste and texture. Plus, grass fed meat is known to have reduced levels of saturated fats, increased omega-3 fatty acids and higher percentages of antioxidants, vitamins and minerals.

Our Burger Recipe

Although Good Housekeeping found our Beef Steak Burgers to be a winning choice when cooked on the BBQ, we find that being British has kept us from depending on the weather for a perfectly cooked burger. We like to think that come rain or shine, our Beef Steak Burgers give all the flavour and satisfaction of the grill, even if you have to resort to the stovetop. Whether you cook these on a BBQ, skillet or pan – they always hit the spot.

 

The Method:

  1. The Warm-up

Leave your burgers to come to room temperature (around 10-15 minutes should do) and heat up your pan. We like to use a cast iron griddle on a medium to high heat.

 

  1. A Little Goes a Long Way

Use a little oil in the pan or dab straight onto each side of the burger to help avoid sticking. 

 

  1. The Sizzle

Nothing sounds quite like a burger hitting a hot pan. Place the patty in the pan for 3 minutes each side (medium-rare), 4 minutes each side (medium-well done) or 5 minutes each side (well done).

  1. Toast & Toppings

Slice open the burger buns and toast or add to the pan for a few moments to get those lovely griddle marks. Slice up some organic cheddar (our favourite is Lye Cross Grass Fed Cheddar) and place upon the burgers whilst still in the pan for a slight melt. Cut the tomatoes and prep some crisp salad of your choice to add a freshness to every bite.

 

  1. The Important Companion

Don’t forget your sauce of choice. You can't go wrong with a dollop of classic ketchup or mayonnaise, or try with Biona’s Wholegrain Mustard or Kitchen Garden Sweet Onion Relish.
