A hearty, rustic classic made with Eversfield Organic sausage meat.

If you're after a deeply comforting, slow-simmered pasta dish that delivers on flavour, this Slow Cooked Sausage Ragu is just the thing. Using our brand new Everyday organic pork sausage meat, this recipe is beautifully simple yet packed with rich, Italian-inspired taste.

Whether you're cooking for friends, family or batch-prepping for the week ahead, this dish will make your kitchen smell incredible and your table the most popular place in the house.


Serves 4

Ingredients:

  • 400g Eversfield Organic Pork Sausage Meat

  • 1 onion, finely chopped

  • 4 garlic cloves, finely chopped

  • 1 tbsp tomato purée

  • 1 tin (400g) chopped tomatoes

  • 400ml water (or red wine for added depth)

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 2 tsp sugar

  • 2–3 bay leaves

  • Olive oil, for frying

  • Sea salt & black pepper, to season

  • Pasta of choice – we love it with wide ribbons of pappardelle

  • Freshly grated Parmesan, to serve


Method:

  1. Sauté the Base
    In a large, heavy-bottomed pan, heat a generous glug of olive oil over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the garlic and cook for another minute.

  2. Brown the Sausage
    Add the Eversfield Organic sausage meat, breaking it up with a wooden spoon. Cook until browned and caramelised in places for extra flavour.

  3. Build the Flavour
    Stir in the tomato purée, basil, and oregano, allowing the purée to cook out slightly. Then pour in the chopped tomatoes and your choice of water or red wine. Stir to combine.

  4. Simmer Low & Slow
    Add the sugar, bay leaves, and season well with salt and pepper. Lower the heat and simmer gently for at least 1 hour — the longer the better. Stir occasionally to avoid sticking.

  5. Serve & Enjoy
    Cook your pasta according to the packet instructions. Toss it through the rich sausage ragu and serve topped with a generous snowfall of Parmesan.
