When you’re looking for a dish that feels indulgent yet fresh, this venison steak with spicy plum salad is the perfect choice. In just 30 minutes, you’ll create a meal that balances rich, buttery venison with a vibrant salad bursting with sweet plums, fresh mint, and a zingy chilli-lime dressing. Served alongside golden roasted potatoes, it’s a dish that’s as comforting as it is exciting — perfect for autumn evenings or a special dinner at home.
Ingredients
For the Venison Steaks

2 Eversfield Organic venison steaks
-
1 garlic clove, lightly crushed

1 sprig of fresh rosemary (use as a brush if possible)

25g butter
-
Olive oil for frying

Salt & pepper, to taste
For the Spicy Plum Salad
-
2 large handfuls of spinach leaves
-
2 ripe plums, sliced
-
4 radishes, thinly sliced
-
½ small red onion, thinly sliced
-
1 fresh red chilli, finely sliced
-
Zest of 1 lime
-
Handful of fresh mint leaves
-
Small handful of roasted peanuts
For the Dressing

3 tbsp good olive oil
-
Juice of 1 lime
-
Pinch of sea salt & cracked black pepper
To Serve
-
Small roasted new potatoes, salted
Method

Prepare the Salad:
In a large bowl, combine the spinach, sliced plums, radishes, red onion, chilli, lime zest, mint leaves, and peanuts. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper. Pour over the salad just before serving and toss gently to coat. -
Cook the Potatoes:
Roast small new potatoes in olive oil and a sprinkle of sea salt until golden and crispy, around 25 minutes at 200°C. -
Cook the Venison Steaks:
Heat a heavy skillet or frying pan until very hot. Add a splash of olive oil and the garlic clove. Season the venison steaks generously with salt and pepper, then sear for around 1½ minutes on each side. Add the butter and rosemary to the pan, basting the steaks with the melted butter for extra flavour. Remove from the heat and rest the steaks for 5 minutes before slicing. -
Plate Up:
Serve the sliced venison alongside the spicy plum salad, with roasted potatoes on the side.
