No fuss entertaining for a crowd using your leftover festive turkey
Ingredients

300g leftover shredded turkey

1 red onion, sliced thinly

1 garlic clove, crushed

½ tsp chipotle paste

1 tbsp BBQ sauce

1 tbsp tomato paste
-
½ tbsp maple syrup
-
1 tsp paprika
-
8 bread rolls
-
10g grated cheese
-
50g red cabbage, shredded
-
1 sliced red chilli
-
lime wedges to serve
Directions
Fry the sliced onion in oil for 4-5 minutes until softened. Add the crushed garlic and a pinch of salt and cook for a further minute
Add the paprika, chipotle paste, bbq sauce, tomato puree, maple syrup and 100ml water and stir
Reduce the heat and simmer for 5 minutes until the sauce has reduced and become thick and glossy
Add the shredded turkey and warm through over a low heat, stirring often to prevent the turkey sticking
Arrange bowls of shredded cabbage, grated cheese and sliced chilli on a platter along with the split bread rolls and lime wedges
Put the turkey and sauce into a bowl and add to the platter allowing guests to serve themselves
