After washing the new potatoes, place them in a pan of boiling water until they start to soften – this is so they become easy to smash, but not so soft that they become mashed. Roughly 10-15 minutes should do.
Heat a fan oven to 200 degrees C, then finely chop the clove of garlic (Top tip– use the small side to a cheese grater). Finely chop the fresh rosemary and place on the new potatoes in a tray – drizzle olive oil across and mix the potatoes, rosemary and garlic so it is all evenly spread out.
Next, using the bottom of a mug gently push down on each potato so that the jacket slightly bursts, the potato flattens a little and that the insides are visible.
Place the tray in the oven until the potatoes turn a golden-brown. This should take around 15-20 minutes.
Once done, serve hot – these taste great as an alternative to chips with our Beef Steak Burgers.
