How To Store
Our beef shin is delivered fresh in an insulated box. They are butchered fresh to order and will arrive with a 8-day shelf life (including the day of delivery). We recommend for these to be stored below 4 degrees or alternatively, you can pop them in the freezer for up to 6 months.
Our Farms & Suppliers
We source our organic beef from our exclusive network of local Devon organic farms. The cows spend their days grazing freely on a wide variety of native grasses, wildflowers and herbs, roaming the fields and resting under the trees. In the winter, they are given homegrown, organic silage and hay to munch throughout the day. We support traditional British cattle breeds that benefit from natural, slow-growing lives and produce beautifully marbled beef. Our beef is then hung for at least 21 days to mature the flavour for tender, flavourful meat. This creates an exceptional flavour and soft texture that is second to none. From our own cured pastrami to slow-roasting joints, we are immensely proud of our organic, pasture-fed beef.

Slow Cooker Beef Shin
Ingredients:
- 1 kg beef shin (cut into chunks)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup red wine (optional, replace with beef broth if preferred)
- 2 cups beef broth
- 1 can (400g) diced tomatoes
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper
Instructions:

Sear the Meat (Optional):
- Heat Oil: Heat the olive oil in a large pan over medium-high heat.
- Sear Beef: Season the beef shin chunks with salt and pepper. Sear them on all sides until browned, then transfer to the slow cooker.

Prepare Vegetables:
- Sauté: In the same pan, add the chopped onion, carrots, and celery. Cook until they start to soften, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes. Transfer to the slow cooker.

Add Liquids:
- Deglaze and Add: If using wine, pour it into the pan to deglaze, scraping up any browned bits. Let it simmer for a couple of minutes, then pour it into the slow cooker. Add beef broth, diced tomatoes, tomato paste, bay leaves, and dried thyme.

Cook:
- Slow Cook: Cover and cook on low for 8 hours, or on high for 4-5 hours, until the meat is tender and falls off the bone.

Finish and Serve:
- Thicken Sauce (Optional): If desired, thicken the sauce by removing the meat and reducing the sauce on the stovetop, or by stirring in a slurry of cornstarch and water.
- Serve: Discard bay leaves. Serve with your favourite sides.
