Our Suppliers

The Fish Society sources the finest quality fish using traditional, sustainable fishing methods. With their 'fresher than fresh' guarantee, they deliver fish that’s not only responsibly sourced but each catch is frozen at peak freshness, ensuring it tastes as good at home as if it were cooked fresh from the sea.

How To Cook

We recommend:

Pan-Frying

  • Heat a pan: Heat 1-2 tablespoons of olive oil or butter in a non-stick skillet over medium-high heat.
  • Season the fillets: Pat the fillets dry and season with salt, pepper, and herbs.
  • Cook the fillets: Place the sea bass skin-side down in the hot pan and cook for 3-4 minutes, until the skin is crispy.
  • Flip and finish: Flip the fillets and cook for another 2-3 minutes, until the fish is opaque and flakes easily.
  • Serve: Remove from the pan and serve immediately.

3. Grilling

  • Preheat the grill: Heat the grill to medium-high.
  • Prepare the fillets: Rub the fillets with olive oil, salt, pepper, and herbs. You can also use a marinade with lemon, garlic, and herbs for extra flavour.
  • Grill the fillets: Place the sea bass skin-side down on the grill. Cook for 3-4 minutes on each side, depending on thickness, until the fillets are fully cooked and easily flake with a fork.

Serving Suggestions:

  • Serve wild sea bass with lemon wedges, a drizzle of olive oil, and a side of roasted vegetables, sautéed greens, or a light salad. It also pairs well with mashed potatoes or rice pilaf.
