Victoria Sponge is one of the easiest baking recipes – perfect for beginners or for getting the little ones involved! This is a sure crowd-pleaser.
Ingredients

Organic Flour, 200g

Caster Sugar, 200g

Eversfield Organic Unsalted Butter, 200g

Organic Eggs, 3

Vanilla, 1 tsp

Organic Jam

Icing Sugar, 100g

Unsalted Butter, 50g

Directions
Preheat the oven to 160C fan / 180C / gas mark 4 and grease and line two round cake tins.
Sift the flour into a large mixing bowl. Beat the eggs in a small bowl then add them, the soft butter, the caster sugar and a teaspoon of vanilla into the large bowl. Check all the ingredients are in the bowl!
Whisk the mix together (an electric whisk is preferrable) until smooth and creamy.
Divide the mixture between the two cake tins and place into the centre of the oven.
Cook for 20-30 minutes until golden. To check if the cake is cooked, place a skewer or knife into the centre. If it comes out clean, then you’re good to go! If not, place back in the oven for another 5 minutes.
Whilst the cakes are cooling on a rack, mix the icing sugar with butter and 2 tablespoons of warm water until smooth.
Once the cakes are completely cool, layer the underside of one with jam and the other with the butter icing. Carefully place the sides together and enjoy!
