October is National Pasta Month, and we can’t think of a better excuse to roll up our sleeves, boil a pot, and celebrate with some hearty, organic comfort food. Pasta is the perfect partner to our grass-fed and free-range organic meats — simple, wholesome, and endlessly versatile.
We’ve put together four incredible pasta recipes, each featuring one of our favourite cuts and a touch of seasonal inspiration. Whether you’re in the mood for rustic comfort or something a little refined, there’s a dish here for everyone.
🍴 1. Everyday Organic Pork Sausages – Tuscan Sausage & Kale Rigatoni
A rustic, Italian-inspired dish bursting with the savoury flavour of our organic pork sausages, slow-cooked in a rich tomato and fennel sauce. Perfect for a midweek dinner that feels like a Tuscan getaway.
Ingredients:

400g Eversfield Organic Pork Sausages
-
350g rigatoni pasta
-
2 tbsp olive oil
-
1 onion, finely chopped
-
2 garlic cloves, minced
-
1 tsp fennel seeds
-
1 tin chopped tomatoes (400g)
-
A handful of kale, chopped
-
Salt and pepper to taste

Parmesan cheese, to serve
Method:

Squeeze the sausage meat from the skins and break into small chunks.

Heat olive oil in a pan, add onion and garlic, and sauté until soft.

Add fennel seeds and sausage meat, cooking until browned.

Stir in the tomatoes and simmer for 15–20 minutes.

Cook rigatoni in salted water, then add to the sauce with the kale.

Toss together, season, and serve with plenty of grated Parmesan.
🍴 2. Organic Chicken Breast – Creamy Chicken, Leek & Spinach Tagliatelle
Light yet indulgent, this creamy tagliatelle combines tender organic chicken with sweet leeks and spinach in a silky cream sauce. Comforting, wholesome, and ready in under 30 minutes.
Ingredients:

2 Eversfield Organic Chicken Breasts, sliced thinly

300g tagliatelle

1 tbsp butter
-
1 tbsp olive oil
-
1 leek, thinly sliced
-
2 garlic cloves, minced
-
200ml double cream
-
1 handful fresh spinach
-
Juice of half a lemon
-
Salt, pepper & Parmesan to serve
Method:

Heat butter and olive oil in a large pan. Add chicken and cook until golden.

Add leeks and garlic, cooking gently until soft.

Pour in the cream and lemon juice, then simmer for 5 minutes.

Cook tagliatelle, drain, and add to the sauce with the spinach.

Toss to coat, season well, and finish with grated Parmesan.
🍴 3. Organic Beef Roasting Joint – Slow-Cooked Ragu Pappardelle
Transform your Sunday roast leftovers or slow-cooked beef into a rich, hearty ragu — the ultimate comfort dish for cold autumn evenings.
Ingredients:

500g Eversfield Organic Beef Roasting Joint, shredded or diced

2 tbsp olive oil
-
1 onion, finely chopped
-
2 carrots, diced
-
2 celery sticks, diced
-
2 garlic cloves, minced
-
1 tbsp tomato purée
-
1 tin chopped tomatoes (400g)
-
150ml red wine (optional)
-
1 tsp dried thyme
-
300g pappardelle
-
Salt, pepper & Parmesan to serve
Method:

In a heavy pan, heat olive oil and sauté onion, carrot, celery, and garlic until soft.

Stir in tomato purée and cook for 1 minute.

Add the beef, tomatoes, wine, and thyme, then simmer gently for 45–60 minutes.

Cook pappardelle, drain, and toss in the ragu until coated.

Serve with cracked black pepper and Parmesan.
🍴 4. Organic Lamb Mince – Spiced Lamb & Aubergine Penne
A bold, Middle Eastern-inspired pasta dish that pairs our rich organic lamb mince with smoky aubergine, warm spices, and a hint of mint. A real flavour explosion.
Ingredients:

400g Eversfield Organic Lamb Mince

1 aubergine, diced
-
2 tbsp olive oil
-
1 onion, chopped
-
2 garlic cloves, minced
-
1 tsp ground cumin
-
1 tsp paprika
-
1 tin chopped tomatoes (400g)

300g penne pasta
-
Fresh mint, chopped
-
Salt, pepper & yogurt to serve
Method:

Heat oil in a large pan, brown the lamb mince, and set aside.

In the same pan, add onion, garlic, and aubergine; cook until soft.

Add the spices and stir through.

Return the lamb to the pan, add tomatoes, and simmer for 20 minutes.

Cook penne, drain, and stir into the sauce.

Finish with a spoonful of yogurt and a sprinkle of mint.
