A crowd-pleasing festive starter or party dish, using organic chicken wings from Eversfield Organic. These wings are coated in warming Christmas spices, sweet cranberry and orange glaze, and roasted until beautifully sticky and caramelised.

Ingredients

1kg Eversfield Organic Chicken Wings

2 tbsp olive oil

1 tsp sea salt

½ tsp cracked black pepper

1 tsp ground cinnamon

1 tsp ground allspice

½ tsp nutmeg

1 tsp smoked paprika

1 tbsp fresh thyme leaves (or 1 tsp dried)
For the Festive Glaze

150g cranberry sauce (smooth or whole berry)

Zest and juice of 1 orange

2 tbsp runny honey or maple syrup

1 tbsp soy sauce or tamari
-
2 cloves garlic, finely grated

Optional: a splash of brandy or port (1 tbsp)
To Serve

Fresh orange zest

Finely chopped rosemary or parsley
Method
1. Prep the Wings
Preheat the oven to 200°C (180°C fan).
Pat the chicken wings dry with kitchen paper (crucial for crisping).
Place in a bowl and toss with olive oil, salt, pepper, cinnamon, allspice, nutmeg, paprika and thyme until evenly coated.
2. Roast
Spread the wings on a lined baking tray in a single layer.
Roast for 30 minutes, turning halfway through.
3. Make the Festive Glaze
While the wings cook, gently warm all glaze ingredients in a small pan for 3–4 minutes until combined and slightly thickened.
Taste and adjust sweetness or acidity if needed.
4. Glaze & Finish
Remove wings from the oven and brush generously with the glaze.
Return to the oven for a further 15–20 minutes, basting once more, until sticky and caramelised.
5. Serve
Pile onto a platter, drizzle a little extra glaze over the top, and finish with fresh orange zest and chopped herbs.
