Ingredients

For the meatballs

  • 500g Eversfield Organic Pork Mince

  • 2 spring onions, finely chopped

  • 2 cloves garlic, minced

  • 1 thumb-sized piece of ginger, grated

  • 2 tbsp breadcrumbs (or porridge oats for extra fibre)

  • 1 free-range egg, lightly beaten

  • 1 tbsp soy sauce (or tamari for gluten-free)

  • Pinch of sea salt & black pepper

For the sticky glaze

  • 2 tbsp honey

  • 2 tbsp soy sauce/tamari

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1 tbsp tomato ketchup

  • 1 clove garlic, grated

  • 1 tsp fresh ginger, grated


Method

  1. Make the meatball mix
    In a large bowl, combine the pork mince, spring onions, garlic, ginger, breadcrumbs, egg, soy sauce, and a pinch of salt and pepper. Mix gently with your hands until everything just comes together.

  2. Shape the meatballs
    Roll into small balls, about the size of a walnut. You should get around 18–20. Place them on a tray lined with baking paper.

  3. Brown the meatballs
    Heat a drizzle of oil in a large frying pan over medium heat. Cook the meatballs in batches, turning occasionally, until golden brown all over. Remove and set aside.

  4. Make the sticky glaze
    In the same pan, add the honey, soy, vinegar, ketchup, garlic, and ginger. Simmer for 2–3 minutes until it thickens slightly.

  5. Coat and finish
    Return the meatballs to the pan and toss them gently in the sticky glaze until well coated and cooked through (internal temperature should reach 75°C).
