Ingredients
For the meatballs

500g Eversfield Organic Pork Mince

2 spring onions, finely chopped

2 cloves garlic, minced

1 thumb-sized piece of ginger, grated

2 tbsp breadcrumbs (or porridge oats for extra fibre)

1 free-range egg, lightly beaten
-
1 tbsp soy sauce (or tamari for gluten-free)

Pinch of sea salt & black pepper
For the sticky glaze
-
2 tbsp honey
-
2 tbsp soy sauce/tamari
-
1 tbsp rice vinegar or apple cider vinegar
-
1 tbsp tomato ketchup
-
1 clove garlic, grated
-
1 tsp fresh ginger, grated
Method

Make the meatball mix
In a large bowl, combine the pork mince, spring onions, garlic, ginger, breadcrumbs, egg, soy sauce, and a pinch of salt and pepper. Mix gently with your hands until everything just comes together. -
Shape the meatballs
Roll into small balls, about the size of a walnut. You should get around 18–20. Place them on a tray lined with baking paper. -
Brown the meatballs
Heat a drizzle of oil in a large frying pan over medium heat. Cook the meatballs in batches, turning occasionally, until golden brown all over. Remove and set aside. -
Make the sticky glaze
In the same pan, add the honey, soy, vinegar, ketchup, garlic, and ginger. Simmer for 2–3 minutes until it thickens slightly. -
Coat and finish
Return the meatballs to the pan and toss them gently in the sticky glaze until well coated and cooked through (internal temperature should reach 75°C).
