Our organic beef mince, from grass-fed cattle raised on British organic farms, is naturally full of flavour and tenderness, making it the perfect base for meatballs that are both wholesome and delicious.


Ingredients

For the meatballs (makes 8 large)

  • 800g Eversfield Organic Beef Mince

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 free-range egg

  • 50g breadcrumbs (or use oats for a gluten-free option)

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • 8 small cubes of mozzarella (or cheddar for extra tang)

  • Salt & freshly ground black pepper

  • Olive oil for frying

For the tomato sauce

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 2 x 400g tins chopped tomatoes

  • 1 tbsp tomato purée

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • Pinch of sugar (optional, to balance acidity)

  • Salt & pepper to taste


Method

  1. Prepare the meatballs: In a large bowl, combine the organic beef mince, onion, garlic, egg, breadcrumbs, oregano, smoked paprika, salt, and pepper. Mix gently – don’t overwork the mince.

  2. Divide the mixture into 8 equal portions. Flatten each one slightly, place a cube of cheese in the centre, then carefully wrap the meat around it to seal – forming a large “mountain” meatball.

  3. Heat a splash of olive oil in a large frying pan and brown the meatballs on all sides. Remove and set aside.

  4. Make the sauce: In the same pan, heat 1 tbsp olive oil. Add the onion and garlic, and gently fry until softened. Stir in the chopped tomatoes, tomato purée, herbs, and a pinch of sugar. Simmer for 15–20 minutes until thick and flavourful.

  5. Return the browned meatballs to the sauce, cover with a lid, and simmer for another 15 minutes until cooked through and the cheese centres are melty.


Serving Suggestions

  • Pile high on top of a plate of spaghetti with a generous grating of parmesan.

  • Serve with crusty garlic bread and a green salad for a family-style feast.

  • Or keep it simple with buttery mash and steamed greens for a cosy comfort dinner.
