These Maple & Mustard Glazed Organic Chicken Wings are the perfect seasonal dish for autumn evenings – sticky, sweet, and savoury with just the right amount of warmth. Using our Organic Chicken Wings, this recipe balances the earthy spice of mustard with the comforting sweetness of maple syrup, creating a glaze that caramelises beautifully in the oven.

Ingredients (serves 4)

  • 1kg Eversfield Organic Chicken Wings

  • 3 tbsp pure maple syrup

  • 2 tbsp Dijon mustard

  • 1 tbsp wholegrain mustard

  • 2 tbsp soy sauce (or tamari for gluten-free)

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • Salt & freshly cracked black pepper

  • Fresh thyme leaves, to garnish

Method

  1. Prepare the marinade: In a large bowl, whisk together maple syrup, Dijon mustard, wholegrain mustard, soy sauce, garlic, smoked paprika, salt, and pepper.

  2. Marinate the wings: Add the chicken wings to the bowl and toss until well coated. Cover and refrigerate for at least 1 hour (overnight for best flavour).

  3. Cook: Preheat oven to 200°C (fan 180°C). Arrange the wings on a parchment-lined baking tray in a single layer. Roast for 35–40 minutes, turning halfway through, until golden and sticky.

  4. Glaze: In the final 5 minutes, brush the wings with any leftover marinade for an extra glossy finish.

  5. Serve: Scatter with fresh thyme leaves and serve hot with roasted seasonal root vegetables or a crisp autumnal slaw.
