Using our Organic Chicken Wings, this recipe balances the earthy spice of mustard with the comforting sweetness of maple syrup, creating a glaze that caramelises beautifully in the oven.
Ingredients (serves 4)

3 tbsp pure maple syrup

2 tbsp Dijon mustard

1 tbsp wholegrain mustard

2 tbsp soy sauce (or tamari for gluten-free)

2 cloves garlic, minced

1 tsp smoked paprika

Salt & freshly cracked black pepper

Fresh thyme leaves, to garnish
Method

Prepare the marinade: In a large bowl, whisk together maple syrup, Dijon mustard, wholegrain mustard, soy sauce, garlic, smoked paprika, salt, and pepper.

Marinate the wings: Add the chicken wings to the bowl and toss until well coated. Cover and refrigerate for at least 1 hour (overnight for best flavour).

Cook: Preheat oven to 200°C (fan 180°C). Arrange the wings on a parchment-lined baking tray in a single layer. Roast for 35–40 minutes, turning halfway through, until golden and sticky.

Glaze: In the final 5 minutes, brush the wings with any leftover marinade for an extra glossy finish.
