Ingredients

Method

  1. Prepare the duck
    Preheat your oven to 200°C (180°C fan) / Gas 6. Remove the duck from the fridge 30 minutes before cooking. Pat the skin dry with kitchen paper and prick the skin all over with a sharp knife to help the fat render. Season generously with salt and pepper.

  2. Fill with flavour
    Place the orange halves, thyme, and onion into the cavity of the duck. Place the bird breast-side up on a rack in a roasting tin.

  3. Start roasting
    Roast for 20 minutes per 500g, plus an extra 20 minutes. For a 2.3–2.6kg duck, this is around 1 hour 50 minutes – 2 hours 20 minutes. Pour off excess fat occasionally (keep it – it’s perfect for roast potatoes!).

  4. Glaze generously
    In the final 30 minutes of cooking, begin brushing the duck with Eversfield’s Sticky Orange Glaze every 10 minutes, building up a glossy, caramelised skin.

  5. Rest well
    Once cooked, let the duck rest for 15–20 minutes before carving to ensure the meat stays moist and tender.
