To Start

This is a chance to take advantage of the humble pea and its prime in early Spring. The crisp and refreshing bite of a Pea, Spring Onion & Mint Tart is the perfect appetizer before you pile your plate to brim with hunks of organic meat, mountains of veggies and lashings of rich gravy.  

 

The Centrepiece

Due to the Spring lambing season, lamb joints are associated with an Easter meal. However, these lambs are only ready to reach our plates around September. Not to worry though, as due to our fantastic local sheep farmers thinking ahead, we've got a fully stocked grass-fed offering of tempting Lamb joints.

The Saddle of Lamb, stuffed with organic Mint and Rosemary hints towards a family roast to remember. Inspired to season yourself? Well our Whole Leg, Lamb Shoulder, Rack Of Lamb, and Lamb Loin Joint (Boned and Rolled) are all complimented perfectly by rosemary, garlic, thyme and sage. Our top tip is to stud the lamb with your herb a day before you plan to cook. This will allow them the chance to permeate the meat and spread that moreish flavour. If you’re feeling like adding more of a kick, then concoct your own blend or spices. We suggest cumin, garam masala, paprika, black pepper and coriander. The recipe in question is one that we think should accompany any special roast dinner. Yotam Ottolenghi’s Mustardy Cauliflower Cheese.
