A yummy way to use up that extra turkey! Serve with a dollop of natural yoghurt, avocado and a drizzle of lime juice.
1 tbsp olive oil
1 large onion, peeled and chopped
2 peppers, red, yellow or green
500g cooked turkey, shredded
2 garlic cloves, peeled and crushed
1 red chilli, deseeded and sliced
420g can kidney beans, drained
Handful of coriander, chopped
8 taco shells or tortillas
200ml natural yoghurt
1 ripe avocado, chopped or mashed
1 lime
Heat the olive oil in a large frying pan and add the onion, garlic and chilli and fry until softened.
Add the peppers, kidney beans and turkey and fry for a further 5-6 minutes. Season to taste.
Stir through half the chopped coriander, leaving half to sprinkle over as you serve.
Spoon the taco mix into shells or tortilla wraps with a dollop of natural yoghurt, avocado and a drizzle of lime juice.
