Roasted Parsnips with Thyme and Maple

Parsnips sweetened with maple syrup and crisped to perfection in beef fat. A perfect accompanient to your Sunday roast. 

Ingredients

  • 500g organic parsnips

  • 2 tbsp organic beef fat

  • 3 tbsp maple syrup

  • Fresh thyme

  • 1 tsp sea salt

Directions

  1. Preheat oven to 200°C

  2. Peel parsnips and quarter them lengthways

  3. Spoon your beef fat into a roasting tin and put inthe hot oven until that fat is melted and approaching smoking hot

  4. Meanwhile rub the prepared parsnips with the sea salt.

  5. Carefully add the parsnips to the hot fat in your roasting tin. The fat will spit so only add a few parsnips at a time.

  6. Return the roasting tin to the oven and roast for 20 minutes

  7. Remove the parsnips from the oven, pour over the maple syrup and thyme leaves. Give the pan a good shake to make sure all the parnips get an even coating.

  8. Return to the oven for a further 15 minutes or until the parsnips are golden brown and crisp

  9. Season with sea salt to taste.
