A beautiful organic turkey deserves a simple recipe to make it the star of the show.
Ingredients

organic turkey
-
1 organic onion
-
1 organic lemon
-
sea salt & cracked black pepper
Directions
Remove the turkey two hours before cooking and remove the string holding its legs together to allow it come to room temperature
Remove any giblets and place a halved onion and lemon or apple in the turkey cavity
Preheat your oven to 230°C/ 210°C fan
Season the turkey with salt and pepper and place breast side down in a large roasting dish. Cover loosely with foil
Cook the turkey at 230°C/ 210°C fan for the first 20-60 minutes (depending on size), before reducing the heat to 190°C/ 170°C fan and roasting for 30 minutes per kg
Remove the foil and turn your turkey right side up for the final 30 minutes of roasting time for lovely crispy skin
Take the turkey from the oven, cover loosely with foil and rest well before carving. Save the cooking juices to make your gravy
Use the resting time to make your gravy and finish any sides
