1 tbsp olive oil

2 tbsp honey

1 tbsp Dijon mustard

4 carrots, peeled and cut into batons

1 red onion, sliced into wedges

1 courgette, sliced into thick rounds

2 tsp fresh thyme leaves

Sea salt & freshly ground black pepper

🔥 Method

Preheat the oven to 200°C (180°C fan).

In a large roasting tray, toss the carrots, red onion, and courgette with olive oil, honey, mustard, thyme, salt, and pepper until evenly coated.

Nestle the chipolatas among the vegetables, ensuring they have space to cook evenly.

Roast in the oven for 25–30 minutes, turning the chipolatas and vegetables halfway through, until the sausages are golden, cooked through, and the vegetables are tender and caramelised.

Remove from the oven and allow the sausages to rest for 2–3 minutes before serving.
