This age-old recipe transforms humble ingredients into a deeply flavourful, nutrient-rich broth that’s perfect for soups, sauces, gravies, or simply enjoyed on its own as a warming, restorative drink.

🥣 Ingredients

2 Eversfield Organic Chicken Carcasses (or leftover roast chicken bones)

2 carrots, roughly chopped

2 celery sticks, roughly chopped

1 onion, quartered (no need to peel)

3 garlic cloves, crushed

2 tbsp apple cider vinegar (helps draw nutrients from the bones)

1 tsp black peppercorns

2 bay leaves
-
A few sprigs of fresh thyme or parsley

Sea salt, to taste

Filtered water, enough to cover everything (around 3 litres)
Method

Prepare your bones
Place the organic chicken carcasses in a large stockpot or slow cooker. If you’d like a deeper flavour, roast the carcasses first at 200°C for 30 minutes until golden. -
Add the vegetables and aromatics
Add the carrots, celery, onion, garlic, herbs, and spices. Pour in enough filtered water to completely cover the bones, then add the apple cider vinegar. -
Simmer low and slow
Bring to a gentle simmer over medium heat, then reduce the heat to low. Skim off any foam that rises to the top in the first hour. Let it simmer gently for 12–24 hours — the longer it cooks, the richer the flavour and nutrients. If using a slow cooker, set to low and cook overnight. -
Strain and store
Once finished, strain the broth through a fine sieve or muslin cloth into a large bowl. Discard the solids. Season with sea salt to taste. -
Cool and keep
Let the broth cool completely before transferring to jars or containers. Store in the fridge for up to 5 days, or freeze for up to 3 months.
