These five recipes are designed to be simple, quick, and full of flavour, using organic seasonal meat perfect for this time of year. Great for midweek dinners or relaxed weekends with loved ones.


1. Spring Lamb & Pea Orzo

with Organic Lamb Mince

Ready in: 30 minutes

Ingredients:

  • 500g organic lamb mince

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 200g orzo

  • 150g seasonal peas (fresh or frozen)

  • 600ml vegetable stock

  • Zest of 1 lemon

  • Grated organic cheese (optional)

  • Olive oil, salt & pepper

Steps:

  • Heat olive oil in a pan and cook onion until soft.

  • Add garlic and lamb mince; cook until browned.

  • Stir in orzo and pour in the stock.

  • Simmer for 10–12 minutes until orzo is tender.

  • Stir in peas and lemon zest.

  • Season to taste and top with grated cheese.


2. Honey-Mustard Chicken Thigh Traybake

with Organic Chicken Thighs

Ready in: 35 minutes

Ingredients:

  • 6 organic chicken thighs (bone-in, skin-on)

  • 2 tbsp honey

  • 1 tbsp Dijon mustard

  • 3 garlic cloves, minced

  • Fresh thyme

  • 500g new potatoes

  • 200g carrots (cut into batons)

  • 200g purple sprouting broccoli

  • Olive oil, salt & pepper

Steps:

  • Preheat oven to 200°C.

  • Mix honey, mustard, garlic and thyme in a bowl.

  • Toss chicken in the marinade and let sit for 10 minutes.

  • On a baking tray, scatter potatoes and carrots, drizzle with oil, and top with chicken.

  • Roast for 25 minutes, then add broccoli and cook for another 10 minutes.

  • Serve straight from the tray.


3. Pork & Apple Burgers with Slaw

with Organic Pork Mince

Ready in: 25 minutes

Ingredients:

  • 500g organic pork mince

  • 1 apple, grated

  • 1 tsp Dijon mustard

  • 1 tsp dried sage

  • Salt & pepper

  • 4 burger buns

  • For the slaw: shredded cabbage, carrot, and mayo or natural yoghurt

Steps:

  • In a bowl, mix pork mince, apple, mustard, sage, salt and pepper.

  • Shape into 4 patties.

  • Pan-fry or grill for 5–6 minutes per side, until golden and cooked through.

  • Mix slaw ingredients in a separate bowl.

  • Serve burgers in buns with slaw on top or on the side.


4. Haddock Fish Tacos with Herby Yoghurt

with Organic Haddock

Ready in: 20 minutes

Ingredients:

  • 4 organic haddock fillets

  • 1 tsp smoked paprika

  • Olive oil

  • 6–8 soft tortillas

  • Sliced radish, shredded lettuce

  • For the sauce: natural yoghurt, chopped mint & parsley, lemon juice

Steps:

  • Rub haddock fillets with paprika and a little oil.

  • Pan-fry or grill for 4–5 minutes per side, until flaky.

  • Mix yoghurt with chopped herbs and lemon juice.

  • Warm tortillas and fill with fish, lettuce, radish, and a spoonful of yoghurt sauce.

  • Serve with a wedge of lime.


5. Beef & Asparagus Stir Fry

with Organic Beef Strips

Ready in: 20 minutes

Ingredients:

  • 400g organic beef strips

  • 1 tbsp sesame oil

  • 2 garlic cloves, minced

  • 1 tsp grated ginger

  • 1 tbsp soy sauce

  • 1 bunch asparagus, chopped

  • 1 red pepper, sliced

  • Handful of sugar snap peas

  • Sesame seeds for garnish

  • Cooked rice or noodles

Steps:

  • Heat sesame oil in a wok or pan.

  • Add garlic and ginger; cook for 1 minute.

  • Add beef strips and stir-fry for 2–3 minutes until browned.

  • Toss in asparagus, red pepper, and sugar snaps; cook for 5 more minutes.

  • Stir in soy sauce and cook another minute.

  • Serve over rice or noodles and sprinkle with sesame seeds.
