Ingredients

  • 1 x Organic Sirloin Beef Wing Rib Joint (2.4kg)

  • 3 tbsp organic olive oil

  • 3 tbsp organic English mustard

  • 4 garlic cloves, crushed

  • A few sprigs of rosemary & thyme

  • Sea salt & black pepper

Optional extras:

  • A splash of organic red wine for gravy

  • Horseradish cream or red wine jus to serve


Method

  1. Bring to room temp
    Take the beef out of the fridge about 1–2 hours before cooking. Preheat your oven to 220°C (200°C fan) / Gas 7.

  2. Season simply
    Make a quick paste with the oil, mustard, garlic, herbs, salt, and pepper. Rub this all over the joint – the kids can even help with this bit!

  3. Start hot, then slow roast
    Put the joint on a roasting rack in a tin. Roast at 220°C for 20 minutes to get a lovely golden crust, then reduce the oven to 180°C (160°C fan) / Gas 4 and cook for:

    • Rare: ~20 minutes per 500g (about 1 hr 40 mins)

    • Medium rare: ~25 minutes per 500g (about 2 hrs)

    • Medium: ~30 minutes per 500g (about 2 hrs 20 mins)

    A meat thermometer is handy if you’ve got one: rare (50°C), medium rare (55°C), medium (60°C).

  4. Rest well
    Once cooked, cover loosely with foil and let the beef rest for at least 30 minutes before carving. This makes it beautifully juicy and easier to slice.
