This comforting one-pot dish turns your Eversfield Organic Whole Chicken into a vibrant midweek or weekend meal — no carving knife or roast trimmings required! Slow-cooked with zesty lemon, fragrant herbs, and tender orzo, this dish delivers all the flavour of a roast with none of the fuss. Perfect for family dinners, it’s hearty, wholesome, and a clever way to make the most of a whole bird.
Ingredients

1 Eversfield Organic Whole Chicken (1.8–2kg)

2 tbsp organic olive oil

1 organic onion, finely chopped

3 organic garlic cloves, minced

2 organic lemons (1 sliced, 1 juiced)

250g organic orzo pasta
-
1L organic chicken stock
-
100ml organic white wine (optional)

2 tbsp fresh parsley, chopped

1 tbsp fresh thyme leaves
-
1 tbsp fresh dill (optional, for garnish)

2 large handfuls organic spinach or kale

Sea salt & black pepper, to season
Method

Prepare the chicken
Pat your chicken dry and season generously with salt, pepper, and a drizzle of olive oil. Stuff the cavity with lemon slices, a few sprigs of thyme, and a clove of garlic. -
Brown the chicken
Heat a large, deep casserole dish or ovenproof pot over medium-high heat. Add a little olive oil and brown the chicken on all sides until golden — about 5–6 minutes per side. Remove and set aside. -
Build your base
In the same pot, reduce to medium heat and add the onion and garlic. Sauté until softened, then stir in the orzo and toast lightly for 1–2 minutes. -
Add liquid and herbs
Pour in the stock and white wine (if using), then stir through lemon juice, parsley, and thyme. -
Return the chicken to the pot
Place the browned chicken back on top of the orzo mixture. Cover with a tight-fitting lid and cook in a preheated oven at 180°C (fan) for 1 hour 15 minutes, or until the chicken is cooked through (juices should run clear). -
Finish and serve
Once cooked, remove the chicken and let it rest. Stir the spinach or kale into the orzo until wilted. Carve the chicken and serve it on top of the lemony, herby orzo, garnished with dill and an extra squeeze of lemon.
