BBQ Cajun Chicken Legs

Meaty organic chicken legs coated in a Cajun inspired marinade and cooked in Stellar Kitchenware's traditional cast iron pan over BBQ coals.
Ingredients
For the spice marinade
-
1 tsp paprika
-
1 tsp chilli powder
-
2 tsp dried oregano
-
1 clove of garlic, crushed
-
1 tsp sea salt
-
1 tsp cracked black pepper
-
2 tsp demerara sugar
-
2 tbsp sunflower oil
For the salsa
-
1 pineapple, peeled, cored and finely diced
-
½ red onion, finely diced
-
1 red chilli, deseeded and finely chopped
-
2 tbsp fresh coriander leaves, chopped
-
zest & juice of a lime
Directions
The day before
Mix the spice marinade ingredients together and rub well onto the chicken until the legs are well covered
Leave to marinade, covered, in the fridge overnight
On the day
Get your BBQ hot and ready to grill
Preheat a cast iron pan on the BBQ for 10 minutes
Add the chicken legs to the pan and cook for around 30 minutes or until cooked through
Whilst the chicken is cooking, prepare your salsa by stirring the ingredients together gently in a bowl
Serve the cooked chicken legs with your pineapple salsa and chips
