These spiced orange Christmas shortbread cookies are a treat to make and eat, easy and delicious!
Ingredients

250g of unsalted butter

125g of sugar

2 oranges (both zested and 1 juiced)

250g of plain flour
-
1 tsp of mixed spice

Icing sugar to serve (optional)
Directions
In a large bowl, cream together the butter and sugar until it’s nice and fluffy.
Add in the orange juice and zest and stir. Then sift in the flour and mixed spice and give. good mix until the dough is smooth and not sticky - if you’re finding your dough too sticky you can always add in some extra flour.
Shape the dough into a disk then wrap in cling film and chill for about an hour.
Preheat the oven to 170°C/fan150°C/gas 3½.
On a floured surface roll out your dough to around 6mm thick and cut into shapes. For this you can use cookie cutters or freehand it with a knife to create some wonderful festive shapes.
Place your shapes onto a lined baking tray and bake for 10-12 minutes, until they are lightly golden.
Leave to cool for about 10 minutes then dust with icing sugar and serve! These cookies will keep nicely for 2 weeks in an airtight tin.
